Ingredients:

  • 1 cup Quinoa
  • ½ - 1 cup Corn depending on preference
  • ½ cup Red bell peppers
  • ½ cup Scallions
  • 1 cup chopped spinach
  • Olive oil
  • 1/3 cup Sherry vinegar
  • Lime juice – of one lime
  • ½ -1 tablespoon Cumin depending on preference
  • Handful of chopped Cilantro
  • Salt and Pepper

Directions:

  1. Cook Quinoa with 2 cups of water.
  2. Sautee peppers and scallions with a little salt, pepper and olive oil.
  3. Add spinach.
  4. Mix peppers spinach and scallions with corn and cooked (but cooled) quinoa.
  5. Prepare lime vinaigrette: Mix cumin, juice of one lime and add sherry vinegar and a handful of chopped cilantro and mash some more. Add extra virgin olive oil to taste and consistency. Add fresh ground pepper and whisk till combined. If it’s too sour, add a bit of sugar.
  6. Toss desired amount of vinaigrette with quinoa and other ingredients.
