(Gluten, Soy, Egg & Dairy Free)

Ingredients:

  • 1/2 cup Gluten Free Oat Flour (oats can be ground in a coffee grinder)
  • 1/2 cup rice flour
  • 3/4 cup gluten free oats
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup brown sugar
  • 1/2 tablespoon real vanilla extract
  • 4 to 5 tablespoons of oil (grapeseed oil or canola)
  • 1 ripe banana (well mashed)
  • 1 tablespoon apple sauce
  • Dairy Free Soy Free chocolate chips (recommended brand: Enjoy Life)

Directions:

Preheat oven to 350. Oil cookie sheet. Combine all liquids, banana, and apple sauce in one bowl and mix. Combine all flours, oats, salt, baking soda in another bowl. Pour liquid ingredients into bowl with other ingredients and mix until you get a cookie dough like texture. Spoon cookie dough on cookie sheet and "flatten" dough (otherwise the cookies will be lumps). Add chocolate chips on top. Bake for about 10 minutes.
