Yield: 2 Dozen Cookies


  • ¾ cup butter, softened
  • 1-1/4 cups packed brown sugar
  • ¼ cup white sugar
  • 1 teaspoon pure vanilla extract (pure vanilla extract is gluten free)
  • 2 eggs
  • 2-1/4 cups gluten-free baking mix
  • 1 teaspoon baking soda
  • 1 teaspoon Bob's Red Mill baking powder
  • 1 teaspoon salt
  • 1 bag (12 oz.) semi-sweet chocolate chips


  1. Preheat oven to 350 degrees F. Grease two cookie sheets.
  2. In a mixing bowl, cream butter and sugar. Add eggs and vanilla, and mix.
  3. In a separate bowl, mix together gluten-free flour mix, baking soda, baking powder, and salt. Stir into the butter mixture until blended.
  4. Stir in the chocolate chips.
  5. Using a teaspoon, drop cookies 2-inches apart on prepared baking sheets.
  6. Bake in preheated oven for 6-8 minutes or until light brown.
  7. Let cookies cool on baking sheets for 3-4 minutes, then transfer to wire racks.
