  • 2-1/2 cups GLUTEN FREE PANTRY All Purpose Flour Mix
  • 3/4 cup coconut flour
  • 2 cups pumpkin puree, or one 15-ounce can
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 2 teaspoons baking soda
  • 1 cup sugar
  • 1/2 cup maple syrup
  • 1/2 cup milk of choice
  • 2 tablespoons pumpkin pie spice mix
  • 4 eggs


  1. Preheat oven to 350 F.
  2. Mix all dry ingredients in a large bowl.
  3. Whisk wet ingredients together in a separate bowl. Fold into dry mixture. Whisk until combined and smooth.
  4. Place muffin liners into two 12-muffin pans, and spray the insides of the muffin liners with baking spray. Distribute batter evenly between all muffin liners (approximately ΒΌ cup each).
  5. Bake for 20-25 minutes.
  6. turn onto wire rack to cool. Makes 24 Pumpkin Bread Muffins.
  7. Note: The addition of coconut flour and pumpkin puree adds wonderful texture, fiber, and nutrition to this recipe!
