Notes: To make this gluten-free sandwich bread, you may use either a bread machine OR a conventional oven. Directions are given for both. Directions are also given for making your own gluten free flour mix using Bob's Red Mill flour products.


  • 1 tbsp Bob's Red Mill Active Dry Yeast
  • 1 tbsp sugar
  • 1-1/2 cups water (the temperature should be just slightly less than hot)
  • 2-1/2 cups gluten free flour mix (see recipe for gluten free flour mix below)
  • 2 tsp xanthan gum
  • 1 tsp salt
  • 3 eggs
  • 1-1/2 tbsp oil
  • 1 tsp cider vinegar

Gluten Free All Purpose Flour Mix:

For the above bread recipe – USE ONLY 2-1/2 CUPS OF THIS MIXTURE

  • 3 parts Bob's Red Mill Brown Rice Flour
  • 3 parts Bob's Red Mill Corn Starch
  • 2 parts Bob's Red Mill Organic Wholegrain Soy Flour
  • 1 part Bob's Red Mill Gluten Free Masa Harina

Combine all ingredients in a large bowl and mix thoroughly. Make sure you do not see any clumps or streaks of the individual flours. The finished mix should look like one homogeneous bowl of flour. (For the above bread recipe, you will need only 2-1/2 cups of this flour mix. Store remainder in a sealed container.)

Bread Machine Directions:

  1. Combine yeast and sugar in a small bowl. Add water while gently stirring the yeast and sugar. Cover and set aside until it becomes foamy (about 10 minutes).
  2. In a large mixing bowl, combine the flour mix, xanthan gum, and salt. Stir well.
  3. In a medium bowl, whisk the eggs, oil and vinegar until the eggs are about frothy.
  4. Pour both the two liquid mixtures into the flour mixture. Blend the dough in a stand mixer for about 4 minutes.
  5. Scoop the dough into your bread machine, smoothing out the top of the dough. Bake the bread on an 80-minute setting that allows for 20 minutes of kneading, 18 minutes of rising, and 42 minutes of baking. An advantage of NOT using the paddle is that you will not end up with a hole in the bottom of your bread.

Conventional Oven Directions:

  1. Scoop the dough into a greased loaf pan. Allow the dough to rise in a warm area (such as an oven that has been just slightly warmed up for a bit and then turned OFF.) until it is about 1 inch from the top of the pan.
  2. Bake at 375 degrees for 50-60 minutes.
